SKETOS (No Sugar): best for experiencing the pure flavor of Venizelos
- 1 teaspoon Demi-Tasse coffee
- 1 Demitasse cup of water
METRIOS: just a touch of sweetness
- 1 teaspoon Demi-Tassi coffee, Water
- 1 teaspoon sugar
VARI GLYKOS (Sweet)
- 1 teaspoon Demitasse Coffee, Water
- 2 teaspoon sugar
GLYKI VRASTOS (Sweet)
- 1 teaspoon Demitasse Coffee, Water
- 2 teaspoon sugar
The difference between "vari glykos" and "glyki vrastos" is in the foam. On the "vari glykos" you pour the coffee over the cup as soon as it foams. On the "glyki vrastos" you let the coffee foam to the rim of the briki and you pour it to the cup by raising the briki a few inches higher from the cup, as we say in Greek (psilokremasto).
Demitasse coffee can also be enjoyed by adding milk, ouzo, sambuca etc...
Just remember when you make your demitasse coffee, let it settle for a few minutes don't stir, let the grinds settle to the bottom of the cup, then...enjoy
